What type of foods go with Cabernet Sauvignon?
Roast beef, would be my first chocie it’s the best opportunity to show off the best Cabernets, whether they are single varietals or blends. Medium-rare or well cooked beef flatters Cabernets with some maturity to them while a dish that I love due to its simplicity and ease of cooking, Beef Stroganoff, is particularly good with less expensive Cabernets. Something more jammey, rich and soft is needed for barbecued ribs though - look to Chile and the bigger Australian brands.
One of my favourite recipe books - The Wine Lover’s Cookbook by Sid Goldstein - lists six scrummy recipes to accompany Cabernet but the three I have tried, and can recommend, are Steak with Gorgonzola-Walnut Butter and minted Tabbouleh (as the book states dishes that include walnuts or pecans are great when paired with younger Cabernets as the tannins in the nuts lessen the tannins in the wine), Grilled Lamb with Rustic Porcini Sauce (the fat in lamb coats the mouth and lessens the impression of tannins in wine) and Mustard and Sourdough Coated Venison with Currant Sauce.
